The Togouchi Premium is a blend of an 8-year-old Scottish malt and a Canadian grain whisky. After their marriage, the Togouchi Premium matured for another 5 years in Spanish sherry casks in Japan.
Here, the blend was stored in disused railway tunnels instead of the usual warehouses. The result was a fruity and sweet Japanese blended whisky.
What's unusual about this blend is that it's neither colored nor chill-filtered!
The Chugoku Jozo Distillery was founded in 1918 and, in addition to Togouchi whisky, also produces sake, shochu, hon-mirin, and liqueur. The distillery's whisky production began in 1990. Chugoku Jozo does not mature its whiskies in traditional warehouses, but in a tunnel-like adit in the heart of the Nishi Chugoku Sanchi mountain region. This adit was built in the 1970s, is 361 meters long, and was originally intended as a new railway line. In terms of temperature, light, and humidity, this location is perfectly suited for storing whisky.
Tasting Notes:
Nose: Sweet pear, honey, and smoked chocolate.
Taste: Honey, pears with notes of lavender and creamy toffee.
Finish: Sweet finish, dry with a hint of smoke.
