The 16-year-old Bushmills matures in 3 different casks. At least 16 years in Bourbon casks, which create vanilla notes, and in Oloroso Sherry casks, which add fruit and nut aromas. Subsequently, the Bushmills matures for several months in Port casks. This additional maturation provides aromas of red berries.
Tasting
Nose: big, thick, sweet. Butter and raisins. Slowly develops with pineapple, stewed fruits, malted milk, coconut, cereals, cocoa, orange. Lots of (but well-balanced) oak. Palate: round and full. Sweet, dried fruits, Brazil nut, coffee, gentle malt, popcorn. Good grip. Oak in balance. Finish: Long. Hazelnut. Dave Broom, Whisky Magazine
