The distillery's whisky production began in 1990. Chugoku Jozo does not mature its whiskies in traditional warehouses, but in a tunnel-like adit in the heart of the Nishi Chugoku Sanchi mountain region. This adit was built in the 1970s, is 361 meters long, and was originally intended as a new railway line.
